Sweet potato dahl

1 1/2 cups red lentils
large sweet potato
vegetable stock
2-3 T tomato paste
turmeric
handful of chilies
bunch or two of spinach, chopped large

oil
2 onions
3 cloves garlic
garam masala
coriander
cumin
salt

Cook the dahl and the onion with spices separately. Add onion in when done cooking.

This dahl was great. I put in the spinach in at the very end, so it was still plenty fresh when I served it. S and I had it with salad and quinoa–a simple meal, but sharing it with close friends makes it better than most.
