Swiss chard, white bean and sausage soup

  • 2 tablespoons olive oil
  • 1/2 cup diced onion
  • 4 cloves garlic, minced
  • 3 fresh thyme sprigs, whole
  • 1/4 teaspoon red pepper flakes
  • 1 head Swiss chard, coarsely chopped
  • 30 oz. cannellini beans
  • 30 oz. diced tomatoes
  • 5 cups broth
  • 3-5 chicken sausages, cut into pieces
  • 1 teaspoon kosher salt, or to taste
  • Fresh ground pepper, to taste

Brown sausages and onions in the oil and salt. Towards the end, add garlic, thyme and red pepper flakes. When the mixture starts burning and sticking to the bottom, add broth, beans, and tomatoes. Bring to a boil, then simmer for 15 minutes. Add chard and simmer for another 10 minutes or so. Season with salt and pepper.
