I often have days when I fixate on a particular flavour or ingredient. I might crave it, then proceed to dream up ways to include it in a dish. Other times, like tonight, I eat something and one flavour just stands out from all the others and takes up all my sensory attention, and I absorb it, slowly, for a long while.
Today it was pink peppercorn chocolate. I don’t usually want to eat chocolate, but tonight that is exactly what I wanted: bitter, dark chocolate that tastes like the dark, musky spicy that is pepper, but very much floral pink, too. That with a cold glass of water. No joke.
